Spicy Chicken and Rice Stir-Fry for 4
Ingredients:
- 2 cups rice
- 1 pound chicken breast, sliced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 onion, sliced
- 3 cloves garlic, minced
- 2 tablespoons vegetable oil
- 2 tablespoons soy sauce
- 1 tablespoon chili powder
- Salt and pepper to taste
Instructions:
1. Cook 2 cups of rice according to package instructions and set aside.
2. In a large frying pan, heat 2 tablespoons of vegetable oil over medium-high heat.
3. Add the sliced chicken and stir-fry until the chicken is browned and almost cooked through, about 5-7 minutes.
4. Add the sliced bell peppers and onion to the pan and stir-fry for another 3-4 minutes.
5. Add the minced garlic to the pan and stir-fry for another minute, being careful not to burn the garlic.
6. Add 2 tablespoons of soy sauce, 1 tablespoon of chili powder, and salt and pepper to taste. Stir well to combine.
7. Add the cooked rice to the pan and stir-fry for another 2-3 minutes until the rice is well coated in the spicy chicken and vegetable mixture.
