Ingredients:
1 fresh salmon fillet
1 bunch of asparagus
2 cloves of garlic, minced
1 lemon, cut into thin slices
2 tablespoons of olive oil
Salt and Pepper To Taste.
Preparation:
Prepare the asparagus: wash them and cut the hard part at the base. Boil them in salted water for about 5 minutes, until tender but still crunchy. Drain them and pass them in cold water to stop the cooking.
Heat the olive oil in a non-stick pan. Add the garlic and brown it for a few seconds.
Add the salmon fillet to the pan, skin side down. Cook it for 3-4 minutes, turn it over and cook it for another 2-3 minutes, until golden and crispy on the outside and soft on the inside.
Add the asparagus to the pan and cook for a couple of minutes, until piping hot.
Serve the salmon and asparagus with a lemon wedge on top, and a sprinkle of salt and pepper to taste.
