Ingredients:
2 salmon fillets
Salt and pepper, to taste
2 tablespoons olive oil
2 tablespoons unsalted butter, softened
2 teaspoons fresh lemon juice
1 teaspoon lemon zest
1 tablespoon fresh parsley, finely chopped
1 tablespoon fresh dill, finely chopped
1 clove garlic, minced
Instructions:
Preheat the grill to medium-high heat.
Season the salmon fillets with salt and pepper, then brush them with olive oil.
In a small bowl, combine the softened butter, lemon juice, lemon zest, parsley, dill, and minced garlic. Mix well until all the ingredients are incorporated.
Place the salmon fillets on the preheated grill and cook for about 4-5 minutes per side, or until the salmon is cooked to your desired level of doneness.
Remove the salmon from the grill and let it rest for a minute.
Top each fillet with a dollop of the lemon herb butter, allowing it to melt slightly over the warm fish.
Serve the grilled salmon with your favorite keto-friendly side dishes, such as roasted vegetables or a fresh salad.
Recipe 2: Smoked Salmon Roulade with Avocado Mousse
Ingredients:
For the smoked salmon roulade:
8 slices of smoked salmon
4 ounces cream cheese, softened
1 tablespoon fresh dill, finely chopped
1 tablespoon fresh chives, finely chopped
1 tablespoon capers, drained and chopped
Salt and pepper, to taste
For the avocado mousse:
1 ripe avocado
2 tablespoons sour cream
1 tablespoon fresh lime juice
Salt and pepper, to taste
Instructions:
In a bowl, combine the softened cream cheese, fresh dill, chives, capers, salt, and pepper. Mix well to incorporate all the ingredients.
Lay the smoked salmon slices flat on a clean surface, slightly overlapping each other.
Spread the cream cheese mixture evenly over the smoked salmon slices.
Carefully roll up the smoked salmon slices to form a tight roulade. Wrap the roulade in plastic wrap and refrigerate for at least 1 hour to firm up.
Meanwhile, prepare the avocado mousse. In a blender or food processor, combine the avocado, sour cream, lime juice, salt, and pepper. Blend until smooth and creamy.
Remove the chilled smoked salmon roulade from the refrigerator and unwrap it. Slice it into individual portions.
Plate the smoked salmon roulade slices and serve with a dollop of the avocado mousse on top.
Garnish with additional fresh herbs, if desired.
This dish can be enjoyed on its own as an elegant appetizer or served with a side salad for a light and satisfying main course.
