Ingredients:
4 boneless, skinless chicken breasts
Salt and pepper to taste
2 tablespoons olive oil
2 garlic cloves, minced
2 medium tomatoes, diced
1 cup long grain white rice
2 cups chicken broth
1 tablespoon butter
2 tablespoons chopped fresh basil
Steps:
Place chicken breasts on a cutting board and pound them with a meat mallet until they are 1/4 inch thick. Season both sides with salt and pepper.
Heat olive oil in a large skillet over medium heat. Add garlic and cook for 1 minute, until fragrant.
Place chicken breasts in the skillet and cook for 3 minutes on each side, until golden brown. Remove chicken from the skillet and set aside.
In the same skillet, add diced tomatoes and cook for 2-3 minutes, until soft.
In a separate saucepan, bring chicken broth to a boil. Add rice and stir to combine. Reduce heat to low, cover and cook for 18 minutes, or until all liquid has been absorbed.
Stir in butter and chopped basil into the cooked rice.
