Stir-Fried Chicken with Vegetables and Rice
Ingredients:
* 1 pound boneless, skinless chicken breast, sliced into thin strips
* 2 tablespoons oil
* 2 cups mixed vegetables (e.g. bell peppers, onions, carrots, etc.), chopped
* 2 cloves garlic, minced
* 2 cups cooked white rice
* 2 tablespoons soy sauce
* 1 tablespoon cornstarch
* 1/4 cup chicken broth
* Salt and pepper, to taste
Instructions:
1. In a large pan or wok, heat the oil over high heat.
2. Add the chicken strips and stir-fry for 3-4 minutes, until browned and cooked through.
3. Remove the chicken from the pan and set aside.
4. In the same pan, add the chopped vegetables and stir-fry for 2-3 minutes, until slightly softened.
5. Add the minced garlic and stir-fry for an additional minute.
6. Return the chicken to the pan and add the cooked rice.
7. In a small bowl, whisk together the soy sauce, cornstarch, and chicken broth.
8. Pour the mixture over the chicken and vegetables, and stir to combine.
9. Cook until the sauce has thickened and the vegetables are tender, about 5 minutes.
10. Serve hot and enjoy!
