Ingredients:
* 9 lasagna noodles
* 1 tablespoon olive oil
* 1 onion, chopped
* 3 cloves garlic, minced
* 8 ounces mushrooms, sliced
* 1 teaspoon dried basil
* 1 teaspoon dried oregano
* 1/2 teaspoon salt
* 1/4 teaspoon black pepper
* 24 ounces marinara sauce
* 15 ounces ricotta cheese
* 1 egg
* 1/4 cup grated Parmesan cheese
* 2 cups shredded mozzarella cheese
Instructions:
1. Preheat the oven to 375°F (190°C).
2. Cook the lasagna noodles according to the package instructions. Drain and set aside.
3. Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook for 2-3 minutes until softened.
4. Add the mushrooms, basil, oregano, salt, and black pepper to the skillet. Cook for 5-7 minutes until the mushrooms are tender.
5. Add the marinara sauce to the skillet and stir to combine.
6. In a separate bowl, mix together the ricotta cheese, egg, and Parmesan cheese.
7. To assemble the lasagna, spread 1 cup of the marinara sauce in the bottom of a 9x13 inch baking dish.
8. Place 3 lasagna noodles on top of the sauce.
9. Spread half of the ricotta cheese mixture over the noodles.
10. Top with 1 cup of the marinara sauce and 1 cup of the shredded mozzarella cheese.
11. Repeat the layers, starting with the lasagna noodles and ending with the shredded mozzarella cheese.
12. Cover the baking dish with foil and bake for 25 minutes.
13. Remove the foil and bake for an additional 25 minutes, or until the cheese is melted and bubbly.
14. Let the lasagna cool for 5-10 minutes before serving.
